Poached Pears Filled with Gorgonzola Cheese, over Baby Greens and Champagne Pear Vinaigrette

Ingredients:
¼ Cup plus 2 Tablespoons A Perfect Pear Champagne Pear Vinaigrette
1 Teaspoon Finely Minced Shallot
4 Cups Water
¼ Cup Sugar
4 Strips Lemon Zest
4 Strips Orange Zest
4 Strips Lime Zest
2 Bartlett Pears, firm ripe, stem intact, peeled, uncored
2 Ounces Gorgonzola Cheese
6 Cups Baby Greens
Garnish: Reserved Fruit Zest Strips
Directions:
In large salad bowl, whisk ¼ cup A Perfect Pear Champagne Pear Vinaigrette, and shallot.
Combine water, sugar, lemon, orange and lime zests in deep saucepan. Heat to boiling. Carefully add pears, upright. Cover and simmer four to six minutes until tender but still firm. Do not overcook. Carefully remove pears from liquid and let cool completely. Remove fruit zests from poaching liquid. Cool.
Core pears from bottom leaving stem intact. Stuff hollow of each pear with one ounce of Gorgonzola cheese.
Add salad greens to A Perfect Pear Champagne Pear Vinaigrette. Toss lightly. Divide greens between two serving plates. Carefully place one poached pear over greens on each plate. Drizzle each pear with remaining 2 tablespoons of A Perfect Pear Champagne Pear Vinaigrette. Sprinkle with reserved fruit zest strips.
