This is a delicious tangy-sweet sauce with a bold flavor that is delicious on the beef! Also, very quick and easy using the Perfect Pear ingredients that have lots of flavors melded into the mustard and the syrup.

Ingredients:

2 Tablespoons Unsalted Butter, Divided
½ Cup Finely Chopped Scallions
2 Cloves Garlic, Thinly Sliced
3 Tablespoons of A Perfect Pear Spicy Ginger Pear Mustard
1 Cup A Perfect Pear Cinnamon Pear Maple Syrup
2 Tablespoons Chopped Fresh Parsley
4 (4 oz each) Beef Tenderloin Steaks, Trimmed to 1” Thick
¼ Teaspoon Salt
¼ Teaspoon Pepper

Garnish:  1 pear (cored and thinly sliced), and sprigs of fresh parsley

Directions:

To Prepare Sauce:  Melt one Tablespoon of butter in a large saucepan over medium-high heat.  Add scallions and garlic, and cook, stirring frequently, until lightly browned and softened, about 4-5 minutes.  Add A Perfect Pear Spicy Ginger Pear Mustard and A Perfect Pear Cinnamon Pear Maple Syrup. Continue cooking over low heat, stirring constantly, until heated through, about 1-2 minutes.  Remove from heat and stir in parsley.  Keep warm until needed.

To prepare steaks, rub steaks evenly with salt and pepper.  Melt remaining tablespoon of butte in 12” non-stick skillet over medium heat.  Add steaks and cook three minutes per side or to desired degree of doneness.

To Serve:  Place an equal amount of the Perfect Pear Mustard Maple Sauce on each of four plates.  Top sauce with prepared steak.  Arrange pear slices around steak.  Garnish each with a sprig of parsley.

Yield:  4 Servings
